Lettuce Burritos

Featured on June 10th’s cooking demonstration were Lettuce Burritos.  a great course for dinner that doesn’t require the use of the oven.  No oven means no unnecessary heat in the kitchen during those hot summer months.


1 lb Ground Turkey/Chicken/Beef

3 tbsp Olive Oil

3 tbsp Balsalmic Vinegar

2-3 tbsp Salt

2 tbsp Sugar

1 tbsp Soy Sauce

2 tsp Red Pepper Flakes

1/2 cup Chopped Carrots

1/2 cup Chopped Celery

1 cup Chopped Mushrooms

Large Green or Red Lettuce Leaves (from Intervale Farm)

Pine Nuts

1) Heat large fry pan or saute pan on medium with olive oil

2) Add carrots and celery and cook until soft

3) Add ground turkey, mushrooms, vinegar, sugar, soy sauce and red pepper flakes

4) Cook until ground turkey is no longer pink

5) Add salt to taste

6) Remove from heat, and spoon into large lettuce leaves

7) Sprinkle with pine nuts

8 ) Roll it up like a burrito and enjoy
